Cajun Dirty Beans & Rice (Feeds a Family of 4 Plus Leftovers!)

Add some cajun flare to your weeknight with this oh-so-easy to throw together Cajun Dirty Beans & Rice. This easily feeds a family of four, plus you’ll have leftovers for a tasty additional lunch or snack later in the week.

Temps are warming up here, but there’s an occasional cold night when you’re in the mood for a hearty dinner that changes things up a bit. This Dirty Beans & Rice recipe fits the bill. Although it has a few more ingredients than we normally post, this recipe is SO easy to make, we just had to include it.

It’s impossible to mess up, and it’s sure to please. If you have family members who aren’t a fan of spice, you can use a milder sausage. 

Oh, and if you don’t have herbs de Provence on hand, substitute with any that you do, a combination of thyme, rosemary, savory, marjoram or oregano – you could even add tarragon, fennel seeds, bay leaves or chervil.

Dirty Beans & Rice

Here is what you need:

3 celery stalks

1 yellow onion

1 green bell pepper

1 lb ground beef or ground turkey

1 12 oz. pkg. Andouille sausage

4 cups instant rice

1 can red beans (light kidney)

1 1/2 cups chicken stock

3 tbsp butter

Seasonings:

1 tbsp Old Bay

1 tsp salt

2 tbsp garlic powder

1 tsp black pepper

2 tsp herbs de Provence

1 tsp Tony Chachere’s Original Creole Seasoning

Step1: Cook 4 cups of instant rice according to package directions. 

Step 2: Dice onion, celery and green bell pepper. Cook in a large skillet on medium heat with 2 tbsp butter. Cook until the veggies are semi-cooked.

Step 3: Add ground beef or ground turkey to semi-cooked veggies. While that is cooking, slice the sausage and drain and rinse the red beans. Measure out your spices. 

Step 4: Cook until meat is done, then add sliced Andouille sausage. Cook for 3-4 minutes.

Step 6: Add all spices and seasonings, plus 1 can of drained & rinsed red beans, 1 1/2 cups chicken stock and 1 tbsp of butter. Bring to a boil for five minutes.

Step 7: Turn the heat down to medium and mix in cooked rice. Cook stock down and simmer for 20 minutes. Then serve warm!

Feel free to freeze leftovers or keep in the fridge for another lunch or snack during the week.

Note: you can use half the amount of rice and double the amount of beans based on your personal preference. The ample amount of rice makes the recipe stretch farther.

If the seasonings are too spicy, add sour cream or reduce the amount of Tony’s seasoning.
